About me

I am Cajun born and my grandmother is a full blooded Apache Indian for which I am most proud.  I have lived most of my life in Tampa, Florida from a young boy and I am now 59 years young.  I am married to a Sicilian woman of which is the only one I know in the world who can't cook, can you belive that, however for the past 39 years of marriage I have learned to cook the traditional Italian-Sicilian dishes from my wifes grandparents, mother and family.

My background is in Cajun/Creole cooking of course came from my family (My Grandmother mostly)which is a rather large one and spread out all through the bayous of Louisiana, Lafayette County to be exact.  I have been for years now collaborating over and over with all my family members and my wifes family for many, many years to collect and recreate all of those precious old, old recipes that bave been in our familys for so long with us and has so much heritage and family values in them.  I must say that these recipes reach into the 1000's and are extreamly original and dates back to the early 1700's.

One day however I really do wish to create a series of cookbooks or papers on all that I have achieved in cooking, the archiving and gathering up of all these recipes, yet it is but just a dream and I hope some day to make it come true.  I am now totally disabled through injuries sustained in the Vietnam War and being half blind as well now doesn't help much either but somehow, someday I will get it done.

I was the Executive Chef at Austin's Gourmet Restaurant for many, many years where of course we specialized in none other than Cajun-Creole Cuisines & we also implemented all those wonderful Italian & Sicilian dishes.  Austin's I am sadly to say closed in 2001 and I do miss that in my life but we must move on.

Now with all these backgrounds what dose this make me, heck I don't know, just another old retired chef I suppose.  They call me 'Florida's Barefoot Cajun Redneck".  Ok I Don't Like Shoes, What Can I Say....
