About me

I am 4th generation German & Norwegian born in America and learned to cook and bake from my father's mother. Grandma learned from her mother who came to Chicago in 1910. I am the only one in our entire family who can make Apple Strudel traditionally, not by rolling the dough out but by pulling it.

 

Current Project - I started out moving to Wisconsin with the "Harrison-Wallace Memorial Cookbook Collection" as my husband called it, which consisted of 830 different cookbooks/recipe card collections. I cut it down to 30 over the years. Some are from as long ago as 1910 and as new as 2005. My master plan is to transfer the recipes I like into BigOven (only those already not posted and posting them as I go) and then pass the books.

My husband was diagnosed as having Type II Diabetes from Agent Orange exposure while in Viet Nam (since I do the genealogy I have it documented that there is no family history for his side of Diabetes anywhere). He also has High Cholesterol and Heart Disease so I cook for his health. I adapt recipes and love BigOven since it shows me the nutritional values making it much easier for me to know where adjustments have to be made!

My Favorite Foods

My favorite foods are: steamed or broiled lobster dipped in drawn butter with lemon, pizza, my Grandma's Cheesecake (only Eli's comes close but it's no cookie), Plum Dumplings, steak, Chicken Maria (I posted this one on BigOven), Scallops Sauted in Garlic, homemade bread, Grandma Severson's Cinnamon Rolls, goat milk (no Togenburg milk however - I prefer Nubian milk which makes THE best ice cream), French Onion Soup, Steak Diane, Potato Soup, Pancit, German Filled Pancakes, Frozen Fruit Salad, Cajun Bean Soup - I like a wide variety of foods actually. I can cook and bake which according to my hubby makes him "the luckiest man in Wisconsin if not the World". LOL

 

I'm addicted to what my husband calls "Geek Juice" - Mountain Dew Code Red although I also love regular Mountain Dew. I am a huge fan of tea - all kinds of teas. Some of my favorite teas are Earl Grey, Darjeeling, Green and English Breakfast. I also love latte but it has to be fresh ground coffee beans not that sickening sweet stuff you find in gas stations! Hubby will drink that but I can't stomach it any more - give me the good stuff!

That is a great idea for the German Pancakes. We usually used fresh fruit or preserves. They really are so yummy!

My mom's family makes the German pacakes too. We heat a container of frozen strawberries in a pan then thicken with a little cornstarch. Spoon a little down the middle then roll up and pour a little bit more on top. Just seeing the picture brought back some really happy memories.

Your navy bean soup recipe rocks. The mashed potatoes are the secret ingredients. I'm going to comment on it right now. Thanks for a great recipe, sorry I am out of medals. next time around.
