It's part science and part art. You start with your fat (butter or vegetable oil), get it pretty hot over medium heat. Then gradually add flour, whisking to prevent lumps. As the mixture begins to darken begin adding stock or beer to flavor. At this point you can add onion, scallions & garlic to season your roux. When making my first roux, I burned two before getting it just right. Good luck!!

I added my Tuna Salad recipe and it should be the last recipe on my list. You can use this for tuna sandwiches as well just don't add the pasta! Enjoy!
