About Me

I'm a wife and mother, and currently work outside the home as a mortgage assistant. I'm also taking a class in the evenings to be able to stay home with our son and do medical transcription. My life is extremely full right now - almost to the point that I have less-than-no free time. 
 
I enjoy being at my in-laws' cabin in the country and relaxing in peace and quiet. I also enjoy watching my husband pole vault, and hanging around his other pole vault buddies and their families.  It's like a big extended family.  I especially love playing with our 3-year-old son, Louis, and watching him grow.

Some of my favorite foods 

I love junk food!! I'm trying to cut back, but pasta is one of my main loves when it comes to food. I also enjoy a good chicken dish.  I will need more "wild game" recipes soon because we're going elk hunting in a little over a month, so I'll have a freezer full of meat.  I usually just substitute elk burger meat for beef in regular recipes and save a bunch of $$$ from not having to buy meat.
 
One of my most memorable cooking moments recently was watching my then 2-year-old cook mac'n cheese on the stove for the first time. I let him help me stir the noodles while they were cooking, and then let him stir the margarine, cheese mix and milk in.  He had so much fun!!  And I think he actually ate more, too.
 
I love the foods that come with Thanksgiving and Christmas.  My mother-in-law makes THE BEST gravy.  I swear!  We end up eating it on everything - turkey, rice, stuffing, bread...and she always makes enough that we can take some home with us and have it with leftovers.  I also LOVE deep fried turkey!!!
