I have been using my KitchenAid for making sourdough products for roughly five years now and it doesn't seem to make any difference from using large glass bowls. It certainly takes a lot of the work out and its much faster too. BUT I just use it for mixing, not for rising nor for developing a sponge. NO long storage, just the few minutes it take to do the work of mixing and an initial kneading, and then right out of the metal and back onto the board to finish the kneading and into a large glass bowl for the initial rise. I also use the uncoated metal paddle and dough hook.
