About me

Hi.  I live in Highspire, Pennsylvania, which is located right outside Harrisburg, and about 15 minutes from Hershey.  I am happily married to a wonderful man, and we have 2 beautiful daughters, ages 9 & 10.  We also have a 6 yr old Boxer, who...by the way... loves to eat, a Cocker Spaniel, a tea cup Poodle and a Siamese Cat...she hates the dogs.

My daughters and I spend a lot of time in the kitchen trying different recipes or just cooking dinner.  They both like to help by measuring and mixing ingredients.  But my 9 yr old is my little chef.  Her two favorite things to make are meatloaf and cheesy eggs.  She will also taste anything, she's a big foodie!  She says when she grows up she wants to be a Food Critic.  My 10 yr old tends to be a little more picky when it comes to trying different foods, but she loves to bake.  Her Easy Bake Oven was one of her favorite things.  She would drive her dad crazy, making him eat those terrible cookies!  Speaking of my darling husband...did I mention...he makes the best egg and cheese omelets?

Myself, ever since I was a little girl, I loved to cook.  I still do.  I also really enjoy that special time in the kitchen with my daughters...and the food stealing Boxer!

My Favorite Foods

Shrimp Scampi, Crab Cakes, my daughter's Meatloaf and pretty much anything with cheese in it.  I'm not so big on sweets, but if my daughters make them, I'll eat them.

Hi I make a wonderful seafood salad with imatation crabmeat that is so easy. Chop celery and onions. Add cooked shrimp, fresh dill, dijon mustard, pepper and hellman's to chopped celery, chopped onions and crabmeat. Or you might try making a roux with sherry, cheese, mushrooms and crab. Serve it with veggies and rice. How about mixing it with stove top stuffing with celery and onion and put it over white fish. Good Luck Carol
