About me

I'm currently a student at UT-Austin in Philosophy. Once I graduate in Fall '09, I plan to attend culinary school at the Texas Culinary Academy. I don't know where that will take me or even how far I will get, but I love to cook, but even more, I love to bake. There is no greater feeling than making others happy with something you've made especially for them. I would have to say my boyf Mike is my main guinea pig, since I'm always testing out new recipes on him. The other day I made a great Stuffed French Toast with cream cheese, blueberries, and white chocolate and he told me "Who needs IHOP when I have you." That's what baking is all about for me, making others happy. Also, we're trying to eat a bit healthier and drop some unwanted pounds, so I'm scoping out the place for low calorie dishes and hope to put some up one day. Wish me luck!

My Favorite Foods

Anything with cheese or chocolate...or maybe both! I love avocado, fresh spinach, feta cheese, zucchini, turkey, and I love love love using almond extract over vanilla! I know these are ingredients but the combinations are limitless!!! The foods I don't like...mushrooms!!! I've tried and I've tried, but I've never met one I liked! Also, I've cut out red meats and pork, substituting ground turkey for ground beef, turkey bacon for pork bacon, and turkey/chicken franks for hot dogs. Not everyone's thing but I personally think they taste better and I love that they are so much lower in calories! I wish I could become a vegetarian, but I love poultry too much :( I've started limiting my meat intake (but not my protein intake) and usually end up eating vegetarian meals probably 6 out of the 7 nights; they're just moe appeling to me. I'm always looking for new dishes to try.

Hi, was reading your comments about eating vegetarian most nights. We recently had a visit from my son and family. His youngest (11 years old) announced when they arrived that she'd become vegetarian - and we were unprepaired! I blind-baked an individual flan (4 inch case) from ready-bought shortcrust pastry. When it was ready and cooled I filled it with some canned ratatouille and popped it back into the oven to heat. Meanwhile I made a poached egg (see my recipe here for Perfect Poached Eggs), plonked it on top of the ratatouille and served it with boiled potatoes and broccoli (which the rest of us were having anyway). She loved it and it was incredibly simple to prepare. Just thought you might like to add it to your 'Quick and Simple' vegetarian recipes. Hope you try it and enjoy it.

Thank you for the nice comment on the grilled baja bowl. You can really play around with this and put other yummy things in it. Can't wait to try your sushi with the cream cheese in it, I'm afraid mine will probably look like your boyfriends...lol

In that case be prepared to make a ton of goulash!
