Sour cream lasts WAY longer than the date on the carton. Use your nose. Drain off the liquid. If the surface of it looks dry or discolored, scrape it off. You will find perfectly tasty, edible sour cream underneath it. What they use to "sour" the cream acts as a preservative. If it smells bad -- like spoiled milk -- you'll know it and can toss it out.
