About me

I live in Houston Tx, the heart of Southern BBQ and TexMex.  Favorite pastime is fish either coastal or deep sea. I was a cook and chef for over 25 years here in Houston.  I learned cooking from my great grandmother who lived on a tobacco farm in middle Tennessee. A great cast iron cooker.  I started in the kitchen at age 5.  During and after my time in restaurants, i taught myself how to use computer, software and ultimately computer POS systems and networking.  I now consult restauranteurs kitchen design, labor and food cost controls, computer systems, recipe development and food presentation.  I have worked in fine dining in Houston, such as Brennan's, The Rainbow Lodge, Cafe' Annie, and Carrabbas.  But this was not my favorite style of cooking.  I love Love BBQ, in all sizes shapes and forms.  I enter many contests in Texas and do many parties for friends and business associates usually centered around a whole hog, pork shoulders, ribs and exotic meats such as alligator, snake, and smoked fish of all kinds.  SMOKE IT LOW AND SLOW, is my mantra.

My Favorite Foods

Perfectly done pork of any kind.  I don't have a favoite thing, just a favorite method, smoking. But, if i had to say what i like to make the most....is dinner at home with my wife and a another couple, and spend the time laughing, cooking and enjoying a killer bottle of wine.  I love that i was taught at such a young age, the basic principals of cooking without knowing at the time that i was doing so.  By age 10 i was making sculpted birthday cakes for other neighborhood kids that were at the request of their parents.  And the most special occasion i had to cook in my life was the 24 hours before wedding my wonderful bride, and cooking for 400 people for the reception and pulling it off with less than 3 hours before the wedding and the serving it after the services.  We did not have a lot of money, and because of that, it made that gift for my new wife an experience that neither of us will ever forget.

Just gettin my feet wet in this program. I hope to become good enough to figure out how to share. I am experiencing difficulties in two areas. 1. Importing recipes from mastercook from another computer on my network. I cant put the my main computer because it is a 64 bit and not a 32 bit device. Master cook won't work on Vista of any kind and does not like 64 bit OS. Second, i did manage to get a few recipes transferred, but they lack the description about how to put it together. I can't seem to find a place or command on how to do that. And thank you very much for the warm welcome. I look forward to sharing to and from all of you.
