Savory soup that you can make in an Instant Pot in about an hour.
1. Rinse the beans and drain. Sort any unwanted debris.
2. Turn the Instapot on saute, add olive oil and the sausage. Saute until the sausage is brown, remove and set aside.
3. Add the onions and saute until tender.
4. Turn off the Instapot and add all the ingredients except the Tomatoes and Sausage to the pot.
If there is a seasoning packet with the beans, add that in too.
5. Cook on HIGH pressure for 60 minutes. Let set for 10 minutes, then quick release pressure.
6. Stir in the tomatoes with juice and the sausage.
7. Season with Salt and Pepper to taste. We also added some Creole seasoning as our beans did not have a seasoning packet.
