A hearty bean soup made with ham added, or without if it needs to be vegetarian, adapted from the recipe on the package of Hurst's HamBeens 15 bean soup mix.
1. Soak beans in a large pan overnight in 8 cups of water. After soaking, drain and rinse well.
2. Return beans to pan with 8 cups of water, the onion and meat (if using). Bring to a boil, reduce heat and simmer for 1-1/2 hours. Stir occasionally.
3. After simmering, add tomatoes, chili powder, lemon juice and garlic. Simmer, covered, another 30 minutes.
4. Salt and pepper to taste.
Makes 8 - 12 servings.
