In a crock pot place frozen ham hock (I keep mine frozen in separate zippie bags since I cook in fits and starts), onion, garlic, bay leaves and water - could NOT remember if I used 4 cups or 8 cups - will update next time i make. I cooked on "auto" which starts high and shifts to low ...after ....some time, can't remember.
Meanwhile, sort and soak the beans. I put the bowl of beans in water in the fridge - since I cook in fits and starts - and might not get back to it for a bit. This was early Friday morning - took the day off work!
Sometime Saturday afternoon I unplug the crock pot and strain out the spent ham hock and stuff into my cast iron/ceramic dutch oven. Strain the water off the beans and add them to the dutch oven. Bring to boil, then simmer - I ended up letting it get to a pretty heavy boil accidentally by leaving it too close to half way trying to get it started. No problem! Cook an hour or 2 then add barley or desired pasta/potato and tomatoes. My cooking was interrupted.
Had to leave to give a needy senior a ride to grocer so after about 1 1/2 hours of simmer, put the pot, lid slightly ajar, in fridge on stack of newspapers. Back after about 4 hours and put the pot back on to boil, then simmer again. After about an hour, added the barley and tomatoes. cooked til i liked the way it looked - about another hour.
