Very good. I double recipe & only used half of cheese called for & no velveeta. I used sharp cheddar a sprinkle over rice then again on top. This was Plenty of cheese for us. Baked @ 350 for about 30 min. I also shredded chicken & pulsed broccoli.
Perfect cold weather meal. The leftovers are going in the freezer for more quick meals. I would not change a thing in the recipe. I used leftover chicken from a rotisserie chicken, so this was really easy.
Wife made this last night after I picked it out and sent it to her.
All I can say is, "I can't wait for lunch today", leftovers!! And might I add, not much. We pretty much put the kaboosh to a doubled recipe.

This is a really yummy dish! I used brown rice (way less than recipe called for). I used shredded sharp cheese (no velveeta). I pulsed cooked chicken & broccoli in the food processor so it could be evenly distributed in every delcious bite. I baked at 350 for 30 min then 400 for 10 min so the cheese would brown.
