Great recipe. Our son is not a big salmon fan, and said it tasted like eating a good Italian meal. Served the salmon on a bed of baby spinach which added nicely to the meal. Also served with crispy baked potato pieces.
Tried this for the first time tonight. Thoroughly enjoyed preparing and cooking the dish, almost as much as eating it!
I love balsamic vinegar so I used a little more than what the recipe suggested and it didn't overpower the dish at all. Also love a crispy skin on salmon so cooked it for an extra few minutes.
Serves with diced potato and chorizo, this one went down a treat. Thanks for the recipe!
Scrumptious!!! Very easy to make and tastes sooo good; I served the salmon topped w/the tomato "relish" on a bed of mixed greens (I also sautéd onions w/ the salmon). So good-my honey was very impressed ; )
My daughter asked for salmon for dinner and I didn't have a clue. I found this recipe right off the bat and did not have to buy many ingredients, so I went for it. It has a very fresh flavor and was very easy to prepare. The whole family loved it and I am sure I will make it again.
I would suggest placing the fish on top of your preferred starch and spread the relish on the plate surrounding both, not on top of the fish. Otherwise you may obscure the flavour of the fish. Garnish with a small sprig of basil!
