Low Fat Blueberry Scones....I came across this recipe (check out Mennonite Girls Can Cook blog)
So, I ventured out to try the recipe (with a few of my own adaptations)... I was amazed at the result. For being low fat this scone is light, fluffy, moist and not dense at all. It isn't too sweet and the blueberries add a touch of tartness to the scone. They also look great when they come out of the oven as well (not to mention the wonderful aroma that lingers in the kitchen).
ladysnow ,this was Great , I would even like it better if it had the calories listed for the recipes.
knotted ,I made these using 1 cup whole wheat flour and 1 cup regular flour, and using cranberries instead of blueberries. Excellent!
pineapplebutter ,I'm not sure if I've really had too many scones before, but these were still pretty good just in general. I didn't have buttermilk on me, so I did the milk and lemon juice combination. But this is a great basic recipe, so next time I can play around with it a bit more. Thanks for posting.
