Start fire in grill, placing rack about 6 inches above coals. When coals are almost ready (medium-hot), in 2-quart saucepan combine brown sugar, apple juice, oil, soy sauce, ginger, salt, and pepper; bring to boil over medium-high heat, stirring until sugar dissolves. In small bowl stir 1/4 cup water into cornstarch to dissolve; add to mixture in saucepan. Return to boil, stirring. When mixture is slightly thickened, remove from heat. Grill pork chops over hot coals 10 to 12 minutes, turning once. Brush with sauce; grill 5 minutes longer until pork is well glazed and cooked through, turning once more and brushing with sauce. To serve, spoon remaining sauce over pork chops.
