Preheat oven to 350 degrees F.
Take the peel off of a very ripe persimmon.
Blend with a mixer or puree with a fork.
Mix with the oat flour.
You may combine cinnamon and nuts too.
Spoon the mixture on a lined baking sheet.
Bake for 15 – 20 minutes.
If you like them sweeter, add your favorite sweetener.
Options for gluten sensitivies: you can substitute the oats with almond flour.
