Our 5-layer dip is a big hit at Super Bowl parties and brunches. Serve with your favorite chips.
PLAN HUMMUS
2 cups low-sodium chickpeas, drained and rinsed
½ cup extra virgin olive oil, plus additional for drizzling
Juice of 1 lemon (about 3 tbsp)
2 tbsp water
2 cloves garlic, peeled
2 tsp ground cumin, to taste, plus a sprinkling for garnish
? tsp sea salt Freshly ground black pepper, to taste
Optional garnish: chopped fresh parsley leaves, fresh dill, or fresh chives
Combine all ingredients, except for garnish, in a food processor and blend for 1 minute. Taste and adjust seasoning (you may want to add more lemon juice). To serve, drizzle with additional olive oil and sprinkle with a bit more cumin and some parsley, dill, or chives, if desired. Serve immediately or refrigerate up to 5 days. Makes 7 to 8 servings (about 2 cups)
ZUCCHINI SALSA
1 large zucchini, cut into 1/2 inch cubes
1 medium red onion finely chopped
juice of 2 limes
2 cloves garlic, finely chopped
1 jalapeno pepper, stemmed, seeded, and chopped
sea salt and freshly ground black pepper, to taste
optional: 1/4 cup chopped fresh cilantro
Combine all ingredients in a small bowl. Serve immediately or refrigerate for up to 3 days.
PLAN GUACAMOLE
2 ripe avocados, halved and pitted
1/2 red onion minced
juice of 1/2 lime
2 tbsp water
1/8 tsp sea salt
freshly ground black pepper
Optional: 1/2 tsp chipotle powder
Place avocado in a medium bowl. Using a fork, mash avocado. Add onion, lime juice, water, salt, pepper, and chipotle powder. Serve immediately or place pits back in guacamole mix to keep it from turning bro
5 LAYER DIP INSTRUCTIONS:
Layer ingredients in a glass pie dish or baking pan as follows: hummus, ricotta, salsa, guacamole, and finish with Gouda. Top with olives, if you like. Makes 8 to 10 servings
