A yummy seviche that doesn't use raw fish.
Chop tomatoes, green onions, avocado and green chilies. Add to shrimp.
Mix together oregano, bay leaf, lemon juice and salt. Add to shrimp mixture. Add olive oil and ketchup. Chill.
Serve with Fritos Scoops and margaritas.
