This is a wink to Thanksgiving. It's really good and served with a healthy rice cake instead of bread. My "healthy foods taste awful" husband, loved this burger!
Mix the turkey, egg, veggies, cranberries, sage and thyme together in a bowl.
Careful not to over-work the mixture
Heat a skillet with 2 tablespoons of Olive oil
Divide meat mixture into four servings and pat to form
Salt and pepper to taste
Put in the heated skillet and brush remaining olive oil over the tops
While they are cooking place a rice cake on a plate and add the tomato to the top of each one to moisten the cake
When you flip the burgers, just before you take them out of the skillet, place the sliced cheese on top to melt
Top the rice cakes and tomatoes with the burger and enjoy
