BRIEF DESC : Maanga Thokku. A pickle made from grated raw mangoes.
Accompaniment : Goes well with almost anything. Dosa/ Upma / Rice/ Chapati
Method : 1st step is to wash the mangoes and wipe dry with a clean cloth. Peel the mangoes and keep aside to drain.
Heat 750 gms of the oil in a kadhai and add the garam masala, mustard seeds, whole pepper and curry leaves. The oil needs to be heated until it fumes. Remove from stove and keep aside to cool.
In a kadhai add 250 gms of oil and add the powdered ingredients. First add mustard powder, methi, turmeric, salt and lastely chilli powder. When all the powders are fried add the grated mangoes and cook till the water evaporates. The mangoes will cook in this time.
When both the mango mixture and the oil are cooled to room temperature mix them well together and bottle.
Tip : Add chilli powder in the end to retain red color and add the oil to the mango mixture only when fully cooled for lasting pickle.
