1. Pull silver skin off ribs
2. Coat with yellow mustard
3. Sprinkle with Blues Hog seasoning to a medium coverage. Optional: Add some cayenne pepper for some heat.
4. Smoke for 2 hours at 225°
5. Wrap ribs in foil along with brown sugar, honey, barbecue sauce, melted butter and light black pepper.
6. Bake in the oven for 1 hour at 225°. Adjust temp or time depending on tenderness. Check every 30 minutes after an hour. Ribs are done when the meat pulls away from the bone and the rack is floppy.
7. Let cool in foil for 20 minutes.
8. Slice, coat lightly with sauce and stack on serving tray.
