This is incredible, my kids beg for it. We are lucky if it lasts an hour
1. Boil Acini de pepe until al dente, drain and set aside.
2. While boiling Acini, drain fruit saving juice in a medium size pot.
3. Mix together reserved juice, beaten eggs, sugar and tapioca flour. Heat over medium heat stirring until sugar is completely dissolved.
4. Pour sauce over cooked Acini and stir thoroughly breaking up any clumps, put in refrigerator until completely chilled.
5. Once cooled add in drained pineapple, mandarin oranges and coolwhip, folding carefully. Continue to chill until served.
