1. In a large skillet over medium heat, cook onion in butter until tender. Add sausage, chilies, jalapeno; cook 4-5 minutes longer or until heated through. Add the eggs, salt, pepper and cayenne; cook and stir until the eggs are completely set
2. spoon fillings off center on each tortilla. Sprinkle each with 2 tablespoons cheese. Fold sides and ends over filling and roll up. Serve with taco sauce if desired.
To freeze, wrap each in waxed paper and then aluminium foil. Freeze for up to 1 month.
TO USE FROZEN BURRITOS. Remove foil. Place waxed paper-wrapped burritos on microwave-safe plate. Microwave at 60% power for 1 to 1-1/2 minutes or until heated through. let stand for 20 seconds.
