This lightly spiced pork stew makes a really delicious supper dish served simply, as it would be in Cyprus, with warmed bread, a leafy salad, and a few olives.
Cut the pork into small chunks, discarding any excess fat. Crush the coriander seeds with a mortar and pestle until fairly finely ground.
Mix the coriander seeds with the sugar and salt and pepper and rub into the meat. Leave to marinate for up to 4 hours.
Preheat oven to 325F. Heat 2 Tbs oil in a large skillet over high heat. Brown the meat quickly in three batches, then transfer to an ovenproof dish.
Add the remaining 1 Tbs oil to the pan and fry the onions until beginning to color. Stir in the wine and a little salt and pepper and bring just to the boil.
Pour the onion and wine mixture over the meat and cover with a lid. Bake for 1 hour, or until the meat is very tender. Serve garnished with fresh coriander.
