Suggest a better descriptionIn a large casserole, brown meat in about 2 tablespoons of olive oil. Remove, and set aside.
Sauté onions and bell peppers for about 5 minutes, then add garlic and continue to saute for another mnute. Add canned tomatoes.
Add the meat back as well as chicken stock, bayleaf, and vinegar.
Bring to a boil and then let simmer covered ffor about 30 mnutes.
Add carrots and olives and simmer for another 15-20 minutes until meat is tender.
