Agnes found this recipe in the 1972 Farm Journal’s Country Cookbook. Usually she doubles the icing recipe.
Cake:
Sift together flour, soda, salt, spices & cocoa.
In a large mixing bowl combine oil & sugar. Beat until well blended. Stir in hot applesauce blending thoroughly. Add dry ingredients, blending well. Stir in raisins & walnuts.
Turn batter into 2 well greased and floured 9" pans.
Bake at 400° for 15 minutes. Then bake at 375° for 15 minutes longer. Cool pans on racks for 5 minutes. Remove from pans and complete cooling on racks. Fill and frost with Caramel Frosting.
Caramel Frosting:
Melt 1/2 cup butter over low heat. Stir in 1 cup dark brown sugar, firmly packed, and 1/4 tsp. salt. Bring to a boil over medium heat; boil hard 2 minutes stirring constantly. Remove from heat, cool to lukewarm.
Stir in 2 cup confectioners’ sugar & beat until smooth. If frosting is too thick, beat in a little milk.
Notes: This is a wonderfully moist and flavorful cake, but the icing is what makes it divine!
