Whisk dry ingredients in a bowl (sugar is a wet ingredient)
Separate eggs and set aside whites
Mix wet ingredients including sugar in a separate bowl
Pour wet ingredients into dry and gently mix until almost smooth -- let sit for 30 minutes if possible
Whip egg whites to stiff peaks
Juice lemon and mix into batter
Gently fold egg whites into batter
Cook the waffles and hold in pre-heated oven to keep them crispy
