Bob's Alfredo Sauce for Fettucine Alfredo
Use a 3 quart saucepan. Melt butter slowly in saucepan. As soon as butter is melted add the 1 cup of heavy cream and bring to a simmer. Stirring frequently let butter/cream mixture simmer for about 3-5 minutes--it will thicken slightly. Turn off the heat and add the grated parmesan and stir to melt the parmesan. Add enough parmesan for your own tastes. Our recipes call for 1/2 cup parmesan but when you use a good quality parmesan reggiano you won't need as much because the flavor is stronger.
don't let the butter turn brown; as soon as it is melted add the cream. Let it simmer don't let it come to a full rolling boil, it will curdle the cream.
