This all purpose chicken is great shredded or cubed in any recipe. I use the same seasoning also to do just regular baked chicken in the oven for all purpose to go into salads, soups, etc. This yields about 6 cups to be used in a recipe immediately or can be frozen in portions for use later.
Place chicken in slow cooker. Sprinkle chicken breasts with all the spices. Add chicken stock. Cover and cook on low for 4-6 hours. Shred chicken with two forks. Cool completely and if you want to freeze, divide into ziplock baggies.
If you do a large batch of this a good trick is to use the regular mixing attachment on your kitchenaid mixer to shred the chicken! It will shred it into even fine shredded chicken in just a few seconds.
To save time I sometimes prepare a triple or quadruple batch of the seasonings in a tiny little tupperware container so i have the seasonings pre-measured for prepping chicken in a hurry. You can use measurements above and then when preparing chicken use about 1 teaspoon of the seasoning mix per chicken breast.
I use the same seasonings above as a dry rub quickly on oven baked chicken breasts in foil packets. This only takes around 20 min to cook at 350 and is great for cubed/sliced chicken for sandwiches and salads.
