Makes approximately 2 cups
Over Medium-high heat:
Melt butter in a sauce pan and add the vegetables.
Cook vegetables until brown and softened.
Stir in flour and stir until well browned
Slowly whisk in the stocks and bring to a boil
Add bay leaf, thyme and peppercorns
Reduce to a simmer for 20-25 minutes
Strain gravy through a fine mesh to remove the solids
Season with salt and pepper to taste
