First let’s preheat the oven to 350 degrees F (180 degrees C). Doing this just now will get the oven heating to the desired temperature for when we need it.
Take your baking tray and line with baking paper, put the almonds on top and put in the oven for 8-10 minutes or until light brown. You should smell them when they are toasted also.
Once the almonds are ready remove and leave to cool, and then chop them coarsely.
Line the tray with parchment paper and reduce the oven temperature to 300 degrees F (150 degrees C).
We need two mixing bowls for this almond biscotti recipe. One bowl will be for your wet ingredients and one for the dry.
Let’s start with the wet, so crack the eggs into one of the bowls and beat with a whisk.
Next whisk in the vanilla and almond extract.
Now it’s time for the dry ingredients so take the bowl and add the flour, sugar, baking powder and salt. Mix it all up!
Take the almond and mix them with the dry ingredients, make sure they are well mixed in.
Now we want to combine the two and I really recommend using your hands to mix, best way in my opinion. Keep mixing the wet and dry ingredients until dough is formed.
Once you have a nice dough form a log shape with the dough remember to dust the surface with a wee drop flour to stop the dough sticking to the surface. You want to cut two log shapes.
Place on the baking tray with parchment paper and flatten the logs more to shape them.
Now we want to bake for 35 mins and ensure the logs are firm to touch. Make sure the two are well apart as they will spread as you bake.
Once done remove from oven and cool the logs. Now with this almond biscotti recipe we will bake the biscotti twice.
For now cut your logs into the individual biscotti and place back on the baking tray with parchment paper.
Bake one side for 10-15 mins and the other side for 10-15 mins, the longer the second bake is the firmer the biscotti will be.
Remove from oven and cool.
