When baked in a whoopie pie pan, these biscuits strongly resemble english muffins in terms of size and texture. They are great used as a small sandwich bread or breakfast biscuit!
Mix almond flour, swerve, and baking powder together.
Add cut cold butter and mash it into the mixture with a fork. Mash until all large chunks of butter are gone.
Beat egg whites until frothy and fold it into the flour mixture.
Put the mixture into the refrigerator to set for about 10 minutes.
Fill oiled whoopie pie pan indentions about 3/4 full and bake at 400 degrees for about 10 minutes. My pan makes about 7 biscuits.
