Preheat oven to 375
Roll out puff pastry as flat as you can keeping rough square shape on floured surface. Try to keep in rectangle shape. Cut in long strips about ruler width, at least six but now more than 9.
Mix all filling ingredients in a cuisinart for best results. It will be a sticky blob. You want to take a rounded tablespoon of the mix and roll it into a long snake shape. One down the center of ea pastry.
Sprinkle lightly with cinn & sugar.
Fold the pastry over the filling and pinch edges to close. You can cut them in 1/2 to make smaller pastries, but TRY to close pastry around the edges so no filling is coming out. Filling will pop out on its own.
Bake on parchment lined cookie sheets 20-25 minutes.
Sometimes I drizzle with icing that has almond extract added & sprinkle chopped almonds on top.
