Versatile and simple cracker.
Mix dry ingredients, break up clumps, if any. Add water gradually, until dough comes together. Depending on humidity, water may be more or less than 4Tbl, just add enough to allow dough to be rolled out.
Divide into two balls.
Roll out a dough ball between two pieces of parchment paper to 1/8" thick.
Score with pizza cutter. Prick a hole in center of each cracker.
Sprinkle coarse salt on crackers.
Microwave on parchment paper for about 3 minutes, may take longer depending on moisture content of dough. Remove when crackers are crispy and slightly browned.
Let cool 5 minutes then break along scored lines.
Repeat with second dough ball.
Other toppings also work well, like "Everything Bagel" or rosemary or dill.
