Cook the parsnips in boiling salted water until almost tender. Drain the parsnips well.
Heat the butter in a frying pan & cook the parsnips along with the almonds gently, stirring & turning carefully until they are lightly flecked with brown.
Mix together the brown sugar & mixed spice. Sprinkle this mixture over the parsnips, stirring to mix.
Trickle the lemon juice over the vegetables. Season to taste with salt & pepper to taste. Heat them for one minute.
