Melt butter and add pecans. Cook until butter and pecans are browned. Add the xylitol and brown sugar. Cook until it looks clear and a little browned. Stir in the xanthan gum, whisking well while adding. Add the half and half cream and bring back to a light boil. Add ultrasperse until you reach the desired thickness.
