Suggest a better descriptionPreheat oven to 300F. Line baking sheets with parchment paper or a silpat (Note: Greasing the sheets instead does NOT work here).
Whisk together the almond meal and sugar.
Beat in the egg whites, vanilla extract until a smooth dough forms.
Using a teaspoon, drop dough onto baking sheets, about 1 inch apart.
Bake 24 minutes, then turn off the oven.
Cool the cookies 1 hour in turned off oven, then remove from sheets and store in a dry place.
