Mix all ingredients together in a mixing bowl (mix will be a little watery) to create the batter. Spray six small ramekins with cooking spray. Fill each ramekin half full with the batter, and then drop a cream cheese cube into each ramekin. Top off the ramekins with the remaining batter so that each one is 3/4 full. Sprinkle a mixture of grated cheddar and mozzarella on top of each ramekin.
Place the ramekins on a baking sheet and cook at 400 degrees Fahrenheit for 25-30 mintues.
