Place potatoes in cold water, bring to boil, then reduce heat and simmer for 15 to 20 minutes or until a small knife can be inserted into a potato and removed easily. Drain and cool just until the potatoes can be handled. Peel and cut into 1/2-inch cubes. Sprinkle warm potatoes with the vinegar and toss gently but thoroughly, then sprinkle with the sugar and toss. Add onions and celery. Allow vegetables to cool to room temperature. Mix the mayonnaise with the mustard and add to vegetables. Add the eggs last, taste and season to taste with salt and pepper. Chill before serving.
Variations and additions:
Rustic: Do not peel the potatoes; cut them with a serrated knife to keep the skin intact.
Sweet pickles: Add 1/4 cup very finely minced sweet pickles or relish.
Spicy: Add 1 finely chopped chipotle in adobo sauce and a teaspoon of the sauce. Taste and add more if you prefer it spicier.
Eggy: Add 2 more egg yolks, or decorate the top with sliced eggs and sprinkle with paprika (even better, with smoked paprika).
Peppery/piquant: Add one bunch of very thinly sliced radishes or 2 tablespoons rinsed capers.
Herbs/spice: Add finely chopped fresh parsley, tarragon, chives, dill or curry powder.
Nasturtium: James Beard liked to add a bunch of finely julienned nasturtium leaves.
Bacon: Add two strips bacon, cooked crisp and crumbled.
