Hearty breakfast casserole
1. Preheat oven to 350 degrees. In a large skillet, cook bacon & onion until bacon is crisp; drain the fat.
2. In a large bowl, combine the remaining ingredients; stir in bacon & onion.
3. Transfer to a greased 13"x9" baking dish. Bake uncovered 35-40 minutes or until a knife inserted near center comes out clean.
4. Let stand to cool 10 minutes before cutting.
Shortcut Tip: You can just sauté the onion in a couple of tablespoons of oil and add already cooked bacon.
