With the InstantPot on the saute setting and heat the olive oil. Then add the chicken pieces add salt and pepper to each side of the chicken and sear on both sides until slightly golden brown. Remove the chicken and set it aside on a plate. Add the chopped onions and cook until softened. Then add the chicken back in the InstantPot and sprinkle the poultry seasons to both sides of the chicken. Add baby potatoes and carrots. Add the chicken broth. Secure the lid. Press the Manual or Pressure Cook button and adjust the time to 15 minutes. When the timer beeps, let the pressure release naturally until the float valve drops and then unlock the lid.
To Make This Into Soup
Add 1-2 Cups more broth. When done, break apart the chicken into bite-size pieces.
