This recipe comes from La Vara, a New York restaurant celebrating the Jewish and Moorish roots of Spanish cooking. The dish combines top-quality Cantabrian anchovies with dukkah, an Egyptian nut-spice blend. Toss any leftover dukkah butter with hot capellini and more anchovies, or spread it on a toasted English muffin with honey and a spoonful of caviar, too, if you're lucky enough to have some. Preserved lemons can be found at Middle Eastern groceries and many specialty stores. If you can't track them down, lemon zest can be substituted in equal measure.
1. In a medium bowl, stir together butter, dukkah, lemon peel and lemon juice until fully combined. Spoon butter mixture onto a square of parchment paper. Place another parchment square on top and press butter into a brick or cylinder. Chill until firm, at least 45 minutes, or store in refrigerator up to 1 week.
2. Remove parchment and slice butter into coins or batons. Arrange sliced butter on one side of a large platter and drizzle with olive oil. Beside butter, fan out anchovies. Serve with bread, allowing guests to make their own canapés of butter and anchovies.
