Peasant version of a classic Portuguese dish.
Prepare cannellini beans by rinsing and soaking overnight. If time is a factor, you can use canned beans. If you are unable to find cannellini bean, you can substitute a white kidney bean.
In a bowl, combine all ingredients well, cover with plastic wrap and refrigerate at least one hour. Serve cold.
