Allow puff pastry to come to room temperature. Open up the puff pastry and cut into 1 1/2 inch squares.
Preheat oven to 400. Bake puff pastry for 15 minutes.
Meanwhile in a mixer add goat cheese, Italian seasoning, and sun-dried tomatoes. Mix until well blended. Add more sun-dried tomatoes, if desired. Put goat cheese mixture into a pastry bag with a medium round or star tip.
Allow to cool slightly before tearing each puff in half. (each half will be a separate pizza bite) With the goat cheese mixture in the pastry bag begin filling each of the tops of the puff pastry. About a teaspoon of mixture on each.
Place a pepperoni slice on top of the goat cheese. Then squirt a pea size amount of goat cheese mixture on top and place a slice of olive on top.
Serve right away or refrigerate for later.
