Line a baking pan with foil extending the sides over the edges of the pan. mist lightly with cooking spray.
Melt the chocolate chips and sweetened condensed milk together in a medium saucepan over medium -low heat, stirring constantly until melted and smooth. Stir in the vanilla until combined. Pour 1/2 cup of the fudge mixture into a separate bowl and tint the bowl of fudge pink.
Mix 1 cup of the chopped cookies into the white fudge and pour the mixture into the prepared pan smoothing out the surface. Top with dollaps of the pink fudge scattered at random, then use a butter knife to swirl the two colors together. top with the remaining cup of cookies and the sprinkles.
Refrigerate the fudge for at least four hours before cutting into pieces.
