A really traditional recipe dating from the XIX century.
Cream sugar & shortening in a large mixing bowl.
Add milk, eggs and anise. Add the dry ingredients and mix thoroughly. The batter will be fairly 'wet'.
Use 1/2 tbs to scoop batter and shape by hand into small "cigars". You will need to dip your hands into flour as you work to keep the batter from sticking to your hands.
Place on ungreased cookie sheets. Bake 350 degrees F for 8 minutes or until the bottoms are just beginning to turn brown. The tops should not turn colour.
Cool.
For icing:
Beat egg whites with 1 lb icing sugar.
Add anise (2 drops aprox.) then milk (1/4c. approx) to thin it out.
Dip cooled cookies into mixture so they are completely covered. Put on racks for excess icing to drain.
Do not use anise extract as this is not strong enough to flavour this recipe properly. This recipe will take the better part of an afternoon to do.
