It's mini-pizzas...but not! Take everything that pizzas are and do it differently! Yummy and easy to make without having to buy things you never otherwise use.
1 - Cook sausages on medium-low for 30 minutes, turning every 5 minutes. Drain fat when done.
While sausages are cooking:
2 - Slice the English muffins in half and lay out in a cookie tray, cut side up.
3 - Wash and thinly slice mushrooms.
4 - Wash, core and thinly slice the green pepper and then cut the lengths in half.
5 - Wash and dice green onions to a medium-fine cut.
6 - Shred cheese.
7 - When sausages are cooked, slice into disks. Aim for each sausage to produce 12 disks.
8 - Spread salsa onto English muffins in a medium-thin layer.
9 - Add 4 sausage slices evenly distributed.
10 - Add slices of green pepper to preference.
11 - Sprinkle on green onion to preference.
12 - Cover with cheese.
13 - Add 4 large slices of mushrooms on top (or more smaller slices), evenly distributed.
14 - Broil until cheese melts and starts to bubble.
15 - Remove and serve.
Lots of fun...but it's not pizza!!
