Good, Thanksgiving or Christmas
Scrub sweet potatoes, slice into 1/4 inch rounds. Toss sweet potatoes with olive oil, salt and pepper. Arrange in single layer on baing sheet. Bake 8 minutes on each side till tender. Using a whisk, whip goat cheese, milk, rosemary, and salt and pepper until smooth and fluffy. Spoon 1/2 teaspoon of goat cheese mixture on sweet potatoes. Top with toasted pecans, dried cranberries and drizzle with honey. Serve.
