Sliced apples with blue cheese, celery, walnuts, chives
Lay apple on its side and cut into 1/4" thick slices. Gently remove any seeds. Repeat with remaining apples.
Spread each apple slice with cheese. Sprinkle with celery, chives, walnuts. If desired drizzle with honey and garnish with fresh thyme. Place on platter. Serve immediately.
To prevent browning, dip the apple slices into a sm bowl of 1 cup water to which 1 tbsp. lemon juice has been added.
